I ditto everything everyone else has said, love them for juicing.

another great way I enjoy them is freezing them and turning the cores into raw pineapple ice-cream.

My only comment is, that my understanding is that, like many other fruits with a core, is that agricultural chemicals concentrate in the cores. The core is where fruits take nutrients (and non-nutrients!) in from the plant before they are distributed out to the rest of the fruit. Highly nutritious. But ag chemicals are more concentrated there than in other parts of the fruit. So, apples are the same. I suppose that middle pith of citrus would be the same. But cherries, for example, don't have a core. I may be wrong, but this is my understanding, and it makes sense to me.
