Almond milk

Just wondering if I can pick your brains... I have been making almond milk for a while but have recently been told I should throw the water that they have been soaking in overnight away and then belnd them up with fresh water. Is this right? What are the reasons for this??

I don't know how important it really is. I always throw away my soaking water, because the almonds are beginning to sprout and like all active, living things they produce waste. I discard the soaking water, and then rinse the nuts quickly to wash away any remaining wastes. If you didn't rinse the almonds before soaking them it's probably even more important to discard the soaking water because any dust that was on the nuts originally will now be in the water.

I can't back this up, but I would assume that most soaking is to remove the sprouting inhibiting enzymes, that those enzymes would end up in the soak water.

I always throw mine out.

i do this:

1 cup pre-soaked almonds
4 cups fresh water
1 scooped out vanilla bean
4 soaked dates
pinch of salt

blend almonds and water. strain pulp. return liquid to blender. add remaining ingredients. blend again. consume.

optional ingredients: cinnamon, cardamom, nutmeg, coconut water, coconut meat

How long do you soak your almonds? I saw a video on You Tube and the woman didn't soak them first. Is that necessary?

Your suppose to soak the almond for 6-8 hours. I put mine in water right before I go to bed then in the morning I drain and rinse then use knew water to make the milk.

Thanks Ithierga. What's the purpose of soaking? Is it to let the flavor and oils of the almonds come through more? To "wake them up" to a more living state? If so, what's the benefit of that as compared to unsoaked raw almonds?

The purpose of soaking is to inactivate the enzyme inhibitors present, which can interfere with uptake of nutrients. Sometimes they are called antinutrients. Doing so makes the soaked nut/seed sweeter and less bitter.

I would not use the soak water for my milk! I always change the soak water at least twice during the soaking process and I drain and then rinse the nuts off thorougly before I blend.
