What about starchy root vegetables?

Are there any starchy root vegetables that can be eaten raw? I read it's a good source of hyaluronic acid.

I get confused too about eating things like potatoes raw.
Lots of conflicting opinions out there.

My understanding is that most of these things CAN be eaten raw...although I cannot vouch for the taste or tactile consistency....or digestibility. YOU will have to be the judge of thier sustaining value. Me personally, I don't find raw starchy tubers to be tasty or easily digestible (radishes were ok though! LOL).

-As for danger? Avoid green potatoes. Beyond that, just sample small amounts first...to ensure digestibility....and compatibility...before pigging out! Heh...heh.

I don't mind raw yams. Sweet potatoes are too starchy for my tastes, but I've seen some recipes that say to grate and then soak them in water for a while, to eliminate some of the starchiness. Regular potatoes, however, are just plain nasty to me when raw. Try beets...they're not really a starchy root, but they're very grounding and tasty if that's what you're looking for.

Dr Walker definitely recommended and added raw starches to his menu! He stated that the body can digest small amounts and that we should make use of them. Chewing it thoroughly would help with digestion, because the salivary enzymes already start predigestion of the starch.
