FREEZING JUICE

i HAVE HEARD THAT IF YOU FREEZE JUICE YOU WILL KILL THE LIVE ENZYMES TRUE OR FALSE

I can only speak for Wheatgrass Juice. Using a Refractometer
for Sugar content, my frozen wheatgrass juice measured 1. Whereas my fresh
wheatgrass juice measured 7. I'd say don't do it.....WY

if temps over 120 kill enzymes why wouldn't temps under 32 kill them

I am going to take a sophisticated guess:

Heating speeds up molecules. With molecules traveling at a high enough velocity, the force of inertia overcomes the strength of the molecular bonds, thus molecules seperate / re-structure. When the molecular structure changes and certain things die.

Freezing slows down molecules. There are no forces working against the molecular bonds. No bonds are broken therfore molecular structure remains unchagned. Perhaps some things are damaged by expansion of water in the cells. With juice, this effect could be worse than in whole foods because juice has a higher percentage of water and thus a higher percentage of potentially damaging expansion.
