Freezing Fruits and Veggies

Hi,


Do you guys freeze your veggies and fruits? I freeze grapes, mango, banana, berries etc. But that's all I freeze. I was wondering can veggies be frozen and used later for smoothies or juicing and not be affected in any way? I image they would be more watery. But other than that I wouldn't know anything else. Could you list the fruits and veggies you freeze? I just hate when things go to waste and when I have too much its hard to eat it all up before that happens.

It depends on the school of thought, some believe there is no difference, although I must say its pretty well accepted science in all circles that all fresh veggies and fruits lose some of their nutrients the longer they are frozen, and quite quickly after they are defrosted so are best consumed as close to frozen as possible, then there are those (like me) who believe the above about some nutrient loss, but don't really care cause ya know, its better than NO fruits and veggies in your diet, right? And me, I have to buy in bulk when the sales are really good, so I freeze what I cant eat right away for later consumption... Then there are those who believe that once you freeze them, they lose their life force, and are only slightly better for you than S.A.D., some believe they are just as bad for you...

There is some nutrient loss from freezing, but it is minimal. The main concern is eating food while frozen. This can affect your intestinal flora, which can also affect B12 absorption, if regularly practiced. But eating frozen fruits and veggies on occasion won't hurt.

A nice cold smoothie of bananas and frozen blueberries is great when it's 100+ degrees outside (like it has been here in Memphis!). smiling smiley

When I put greens in my refrigerator and they touch the freezer, the part that touches turns black. I agree with Curator though, frozen vegetables is better than no vegetables.
