Date: June 07, 2008 10:59PM I haven't been about to eat much else but fruit for a couple of weeks, due to various medical issues, but I got so hungry on the way home last night that I had to invent some "real" food to eat. I am a professional cook by trade (although recently turned school bus driver), so while my fiance was driving I made this fantastic dish in my head and threw it together the minute I got home. It was So. Very. Good. I added a couple of tweaks at lunch today and I am now sharing my success with all of you lucky people. Let me know what you think.
Thai-inspired Veg Rolls Sauce: 1 clove garlic, minced 1 tsp grated ginger (or 1/4 tsp ground) 1-2 tsp minced red chilies (to taste, of course) 1 Tbsp unpasturized miso 1 Tbsp fresh honey 1 Tbsp Apple Cider vinegar Mix all together well. Set aside. Filling: 1/4 english cucumber, julienne 1/2 red bell pepper, julienne 2 large white mushrooms, cut in half and then sliced very thinly a handful of sugar snap peas, sliced thinly diagonally (oriental style) a handful of mung bean sprouts 1/3 bunch coarsely chopped cilantro a few leaves of basil, chiffonade (shredded) Toss all together. Pour dressing over and toss gently but thoroughly to combine. Stuff this mixture into appropriate leaves (I used romaine). Roll leaf around filling and enjoy! Re: Fat-free and flavour-full!
