I've never used a dehydrator, but I have read here that a couple of people do use parchment paper.

I've been doing some research on teflex sheets and I don't believe they are toxic in the way we would use them... not heating about 110 degrees, and if you wash them gently with a sponge or cloth rather than something abrasive they should not break down and leach out toxins.

I believe parchment paper works fine for most recipes, but will work less than the best for recipes that are high in liquid, as these will likely stick.

I use parchment paper in my dehydrator and it's great! I even wash it off when I'm done and reuse it.
