I've always love irish moss - Jubbs Longevity

Jubbs Longevity makes smoothies & parfaits with Irish Moss. I wonder if anyone here is familiar with preparing Irish Moss for consumption.

Jamaicans prepare it by boiling the Irish Moss but I'm certain there is an uncooked option available.
