Raw Tabouli

Date: September 28, 2006 07:40PM I have recently discovered the many uses of cauliflower. I used to love Tabouli so I decided to try a raw Tabouli using ground cauliflower as the grain. It came out fantastic. Tasted just like Tabouli but better. Here is my recipe with approximate measurements as I tend to just make it up as I go along.
4 cups ground cauliflower (take a small cauliflower head and remove the florets. Pulse in food processor until it looks like small grains) 2 cups fresh parsley chopped 1/4 cup fresh mint chopped 2 scallions chopped fine 1-2 cups diced tomatoes juice of 1-2 lemons 1-2 T. olive oil sea salt to taste Mix all ingredients together and let sit for about an hour to let flavors marry. I used this as a filling for greek wraps. I filled collard green leaves with the tabouli, sliced kalamata olives, avocado slice, bell pepper strips, and zucchini-tahini sauce. Absolutely delish!
