kim chee

has anyone had experience with making kim chee?
i loved the one i made with cucumbers
but the cabbage kim chee was a little rubbery
any suggestions?

maybe you didn't salt it long enough?
I don't usually eat the common cabbage kimchi, because it's fish saucy with added flour and sugar... there are all different kinds of kimchi, though- keep experimenting! (I prefer making my white cabbage into cole slaw). You are using napa cabbage/chinese cabbage, right?

I do not know about kim chee. But i think it is a good recipe.

I have recipes for both types of cabbages.
I tried it again sort of combining the various recipes
harvested from the net, it worked!
(I did use regular cabbage).
I do so love the stuff!!
