Date: April 10, 2007 02:59PM havent tried these ... but they sound good .. i dont know what kinda relish you are trying to make ...? the green stuff they sell for hotdogs and hamburgs? or something more exotic? there are so many relishes to make!
6 tomatoes, peeled, seeded and coarsely chopped 2 medium-sized red or white onions, coarsely chopped 2 fresh hot chilies, stemmed, seeded and finely chopped 6 garlic cloves, finely chopped 2/3 cup fresh coriander leaves, coarsely chopped Coarse salt 1/4 cup fresh lime juice or wine vinegar 1/4 cup olive oil Combine the tomatoes, onions, chilies, garlic and coriander in a bowl. Add a large pinch of salt and stir in the lime juice or vinegar. Stir in the olive oil; taste, and add salt if needed. Cover, and let the relish stand for 30 minutes to meld the flavors before serving it. Makes about 3 cups NOTE: The volatile oils in chilies may irritate your skin. Wear rubber gloves when handling them or wash your hands immediately afterward. For Green Mango Relish, in a bowl, mix 1 finely diced green mango, 1/4 cup diced ripe mango, 1 tablespoon julienned Thai basil, 1/2 teaspoon sea salt and a pinch of cayenne.
