Beets

Since I love the cooked version of beets I decided that I'd buy them raw and see if I like them this way.

Since I'm new to raw I'm not too sure how to prepare many raw dishes.

Does anyone know of any good recipes with raw beets?

Grate a beet up with a couple of grated carrots, add some pumpkin seeds, some chopped ginger, maybe a little chopped garlic and then dress with some olive oil, apple cider vinegar or lemon juice and a good dash of shoyu (raw soy sauce). Leave for flavours to blend for an hour or so! Then eat with chopped avocado and some spinach leaves.

MMMMM! Sounds yummy! I'll definitely give it a try.

On another note, I'm having trouble finding shoyu around here. Where can I purchase some not to expensive online?

Anybody else? Keep the suggestions coming.

I love making veggie pate with beets, soaked almonds, onions, soaked raw cashews, spices, celery etc, all run through the Champion with the blank for creaminess. Author Rhio has a great recipe book and web site ( the book is called "Hooked on Raw" I think?) that includes a yumm-o beety recipe for a beet and nut-meat pate. The beets lend a sweet earthy contrast to the saltiness and heartiness of the nuts and spices.

I also love my juicing standard of 5-6 carrots + 1/2 to 1 whole beet +
2-3 celery stalks + 1 granny smith apple and a piece of ginger.

And I really like grated beets using my Microplane fine grater. The Microplane makes fantastic, juicy and fluffy (yes, fluffy. smiling smiley ) shreds of beets that I put in my salads or mix into my raw saurkraut. The Microplane brand grater is the *best*. I bought both the Microplane standing box grater and the hand held basic. I also use it for grating my carrots. The texture can't be duplicated using any other appliance.

I've also used my grated beets to make a Pink Goddess salad dressing. I use soaked cashews, mellow or white miso, raw tahini, sea salt, white onion, grated beets, water, and a pinch of parsley all pureed in my blender till thick and creamy.
