Need mayo + yogurt replacement in this recipe

I saw this recipe in the NY Times and was wondering if anyone could suggest replacements for the dairy products? I haven't been preparing many foods beyond salads because I usually eat lots of fruit, smoothies, and salads and don't do a lot of faux cooked or other kinds of recipe-intense foods.

Reading this recipe got my old curry craving going and I thought this would be good to bring to a potluck if I could change it so I would want to eat it...

For the Dressing:

2 tablespoons freshly squeezed lemon juice
2 tablespoons mayonnaise *** ANY SUGGESTIONS?
1/2 cup plain low-fat yogurt *** ANY SUGGESTIONS?
3/4 teaspoon curry powder
1/2 teaspoon ground cumin
Salt to taste

For the salad:
2 fuji apples
2 teaspoons fresh lemon juice
1/3 cup lightly toasted walnut halves (I wouldn't toast 'em)
1 cup thinly sliced celery, from the heart of the celery
1/4 cup raisins
1/4 cup celery leaves or flat-leaf parsley (or 2 tablespoons each), coarsely chopped

1. Mix together the lemon juice, yogurt, mayonnaise, curry powder, cumin, and salt. Set aside.
2. Cut the apple into 12 wedges. Cut away the core of each wedge and slice into thin crosswise slices. Toss in a large bowl with 2 teaspoons lemon juice. Add the remaining ingredients and toss together.
3. Shortly before serving toss the salad with the dressing.

Eating a vegan diet means giving up all animal products, including eggs and cheese. Making this mayonnaise with tofu rather than eggs creates a more healthful, cholesterol-free alternative to regular mayonnaise. This vegan mayonnaise can be substituted for regular mayonnaise in any recipe.


InstructionsDifficulty: Easy
Things You’ll Need:
1/2 block silken tofu (about 5 ounces)
2 tbs. olive oil
2 tbs. fresh lemon juice
1/4 tsp. dijon mustard
1/4 tsp. salt
Dash of ground black pepper, or several splashes of hot pepper sauce
1 tablespoon chopped scallion bulbs, or 1 small garlic clove (optional)

making your own vegan yogurt is a bit harder .. you can buy it tho .. as well as vegan mayo if you dont wanna follow the recipe above (i have used it and its good smiling smiley ....)

as you said you dont eat much processed raw stuff so a small jar of vegan yogurt will probably last you awhile

i say splurge an get it .. the mayo tho is easy enough to make smiling smiley


you could also probably use young coconut meat as its soft and gelly like ..or durian but both will add flavor to your dish that you may or may not like .. especially the durian ! lol smiling smiley

Thanks for the suggestions. I wanted to clarify that this would be for a SAD eaters potluck (at work) so I don't need to be pure.

Yogurt (4 cups):
1 cup un-hulled Sesame Seeds, grounded (optional soaked)
1 Lemon, peeled
1 Tbs Agave or 2 Dates
Pinch Salt
3 cups Water
Blend.

Mayonnaise:
½ cup Almonds, soaked
1/4 cup Water
½ Lemon, juiced
1 small Garlic clove
½ tsp salt
Add in a steady stream, until emulsified:
1 ½ cup Olive Oil
Blend until smooth.
Store in a glass jar in the refrigerator for up to 2 weeks.
