Date: May 18, 2009 03:17AM i made a lemon pie today! this is the best! the meringue is made mostly of coconut and the lemon filling is over a cup of lemon juice, irish moss, a bit of agave, coconut oil, turmeric for color and some stevia. i was a bit worried how it would set up since it was a bit runny before i put it in the freezer. but just after 10 minutes it was already firming up! irish moss is magic! you can't taste a bit of it either. it's a super essential ingredient in these kind of pies.
the crust is macademias, cashews, shredded coconut and dates. i wish i could share! take care ) Re: Lemon Pie!

You'll need to rinse and soak the irish moss overnight as well as premake the meringue before making the pie. Crust: 1.5 cups macadamias 3/4 c. cashews 3/4 c. coconut flakes 2 oz. date paste 1/4 tsp. vanilla 1/8 tsp. salt Process all ingredients and press into pie dish Lemon Filling: 2 oz irish moss(soaked) 1 c + 2 tbs lemon juice 6 tbs. water Blend until smooth then add: 3/4 c. agave and 1/8 tsp. turmeric Blend again until smooth then add: 2 tsp. lecithin and 6 tbs. coconut oil. Blend until well mixed. Coconut Meringue: 3/4 oz. irish moss 1/4 c. water 2/3 c. coconut milk Blend until moss is completely broken down the add to blender: 1 c. coconut milk 1/4 c. coconut meat 1/2 c. soaked cashews 5 tbs agave 1/2 tsp lemon juice 1/8 tsp. salt Blend until smooth and creamy then add: 1 tbs. lecithin & 1/2 c. + 1 tbs. coconut oil. Resume blending until all incorporated. Pout into container and set until firm (overnight for best texture) FYI: I cut down on the agave and add stevia. i feel silly but i was a little confused ( as well as SUPER amaaaaazed!!) okay... so first of all, the "meringue" is the TOP frosty coating? is that right? and then.. the second question is this: so.. you are saying that the beautiful lemony filling is just the irish moss and lemon juice? WHOAAHH? really? that's incredible.. seems to defy logic gorgeous am i right though? the filling will just hold like that from irish moss and lemon juice? wow geniuzz! Re: Lemon Pie!

Date: June 18, 2010 08:39AM wow, looks so delicious, I didnt notice the recipe on here last time I posted,lol... but wow, up here that would cost like $30-$40 to make, but looks so delicious... maybe I'll splurge and make it if I end up going to visit my friend Angels Family again... they are all still raw, and im sure would LOVE this recipe, as I do happen to know her mom has a weakness for lemon meringue pie... Date: July 14, 2010 01:49PM I bought a whole bag of keylimes the other day to make a key lime pie using this recipe but... now that I really look at it many things aren't clear...
2 oz of date paste - purchased or made by me, and if made by me is it just dates processed in the food processor until pasty? Is it 2 oz of dried irish moss soaked, or 2 oz of soaked irish moss? That measurement would make a big difference I think. What kind of coconut milk? Surely not the tinned sort. How do you make coconut milk, by blending raw coconut meat with water or something? How much coconut to how much water I wonder? Coconut meat, from a young coconut or a mature coconut? I'll have to figure out what 2 oz means in tablespoons and teaspoons and cups... I might juice and freeze these keylimes until I figure this one out. Then I'll show you pictures, if I can manage to take some before we eat it all . Re: Lemon Pie!
