That's cute... little baby sprouts.

Consuming sprouts when the tail is the length of the seed is best because they are at their most nutritious. I like to let them enjoy direct sunlight for a day or so before eating them.

I see sprouts as a nutrient rich condiment. The best recipes that I can think of are...
sprinkle in salads
include in smoothies
mix into raw soups
mix into an avocado dip
add to nori wraps

I am not 100% raw so I get to add sprouts to my 'other' foods. Tostadas, avocado-tomato-sprout burrito (can use lettuce or tortilla as a wrap).

And I love lentil sprouts just alone. In fact, it is hard for me to sprout lentils because I eat them a little at a time as they sprout and hardly have enough for a meal. A little handful each time I rinse them... soon there is nothing left! smiling smiley

Anyways...

A really good recipe I tried recently from the Hippocrates Institute.

Sesame Amung The Broccoli:

Sprouted (!) mung beans
broccoli florets chopped
coriander
sesame seeds
cayenne
raw sesame oil

delicious.

oh yea and salt/braggs/nama shoyu (my preferred)

I love sprouts mixed with avocado, a tiny bit of salt, and lemon juice, sometimes a bit of tahini, placed in nori rolls or spread on flax crackers. (okay, now I'm salivating...*L*!) Also tossed into smoothies for an extra boost of chlorophyll :-)
