Roasted Red Peppers - A Good Immitation?

So I'm considering adopting a raw/high-raw diet after spending 4 years as a vegan (3 years in high school, one year now back on the wagon).

One of my absolute favorite cooked vegan meals is a mock Hawaiian pizza - pineapple, olives, and roasted red peppers. After eliminating processed food from my diet this time around, it's been one of those things that tastes "junky" without fake cheeze and such, and I would love to replicate it in the raw.

You can slice them and dehydrate them.

How's the texture? Would they be softened or made crunchy?

I think it depends on how long you dehydrate them. If dehydrated too long, they will most definitely be crunchy.

Thanks. I've yet to save up for a dehydrator, so I was curious.

One more question - could such flavor be achieved with a marinade?
