Knife for RAW foods?

Date: May 30, 2009 09:58PM I came across this awhile back, but now I can't seem to find it. There is a special type of knife that is considered best for cutting/slicing raw foods. A ceramic knife, perhaps? I saw a demonstration where an apple cut with a regular steel knife oxidized and one cut with the other knife did not oxidize.
If anyone knows what I am referring to, please send me a link, point me in a direction, etc. Getting ready to do a major overhaul in the kitchen, & starting from the "ground up", replacing just about everything. Cheers, juicerkatz Re: Knife for RAW foods?

Before making the purchase I would like to know if there is any validity to the claims of them being the best knife for raw food prep, as far as oxidation goes.
