Raspberry mousse torte w chocolate fudge sauce. recipe and pics!

oh my word, this was delicious.

dates, chopped in food processor or by hand
almonds, crushed fairly fine but leave some chunks for texture as you like it
flax seeds, powdered
cashews, powdered
raspberries
maple syrup or agave or whatever you use for sweetener
cocoa powder
coconut oil/butter

use a spice mill to grind the nuts and flax right before you use them. you can crush the almonds in a food processor. if you do this step after you've chopped the dates in there is makes it easier to clean up for some reason.

i used a spring form pan, it's the easiest to get this torte out of. line it with a piece of parchment paper or waxed paper in the bottom.

CRUST
use roughly half and half dates and crushed almonds, just enough to cover the bottom of the pan in a thin layer (no more than 1/4"winking smiley. mix a small amount (TBSP or so) of flax powder with a bit of water to make a paste and add to dates and almonds. mix well with your hands and press into the bottom of the pan. set pan in the freezer while you prep the filling.

FILLING
i blended about 2 cups of raspberries to one cup of crushed cashews with a handful of flax powder mixed in and the liquid sweetner of your choice to taste. start the blender with just the berries and sweetner, then add the crushed nuts and seeds. keep blending until it's creamy looking and smooth, then pour into the pan, gently shaking and/or tapping the bottom of the pan on the counter to spread it out. set into the freezer for at least one hour.

TOPPING
i used about a 1/4 cup of maple syrup and half that amount of coconut oil.
gently heat the liquid sweetner and stir in as much cocoa powder as you like, the more you use the more intense the chocolatey flavour will be. stir until smooth then drizzle in some melted coconut oil and stir until blended well. pour over the mousse and set back into the freezer for a few hours.

OMG, try not to faint at the deliciousness when you eat it. no, really.

best to put it into the spice mill/coffee grinder Ver, fresh is essential with flax as it oxidizes pretty quickly. That's what I do with all nuts and seeds actually, store them in air tight containers in the fridge and grind them fresh!

I had one of these in the freezer for so long that it got freezer burn :'(.
Guess I'll have to wait for summer to try it again. I sure feel like a nice little snack right now though, wah!

Just don't do it with blueberries. They get all weird and gelatinous foamy gross when you blend too many of them. I threw that whole pie out, such a waste.

I don't know, haven't tried yet. Will give it a go with a smoothie first before trying it in a pie though. At least I can strain a smoothie!
