Ricotta Stuffed Mushroom Caps

Date: August 06, 2006 06:47PM OMG I made these last night and they were to die for!! I just made up the recipe so all these ingredients are estimated.
Ricotta: Soaked almonds, sunflower seeds, and macadamia nuts ground up...just estimate the quantity for the amount of mushroom caps you have. Add 2 minced garlic cloves Splash Raw Soysauce Fresh Thyme Salt and Pepper Any dry spice you like (I added a cayenne blend) Taste the mixture as you go...be creative! Clean and de stem the mushrooms....rub and massage with olive oil. Stuff the shrooms with the ricotta. Now the first day, I warmed them gently and ate them with my raw pasta and sauce...I made alot so I had some left over. The NEXT DAY they tasted better than they had the first time 'cause all the spices and olive oil marinated. YUM! I think next time I'll wait it out and enjoy them like that.
