mushrooms and eggplants

I seem to have a lot of these all of a sudden... best use them before they go bad... any ideas? I guess the obvious is some kind of ratatouie thingie but I'd prefer not to dehydrate if poss...

What about stuffing mushrooms with raw baba ganouj? (Soak eggplant in vinegar and salt to remove bitterness. Process eggplant in food processor with tahini, lemon, s&p, parsley, olive oil, garlic and green onion. And you can garnish with shredded carrot or minced celery.)

ooh that sounds delish, thanks Trive! I haven't got a food processor, keep meaning to get one...
last night I marinated mushrooms, eggplant, leeks and tomatoes in oil/lime juice/sea salt/chilli, with fresh basil on top, it's sitting in the sun now on the windowsill, so I'll see how that tastes later smiling smiley the tahini would have been a great addition - haven't got any tho, not even any sesame seeds... might sprinkle some nuts on top...I have hazelnuts soaking, that might work...
