collard greens and kale

I've not tried kale...I can't find seeds in France and it's not on sale here generally, but my neighbour kindly gave me home grown collard greens, called 'bettarave' here, which I found out is genetically very similar. Very excited!

I wondered if anyone knew both and could make a comparision for me regarding flavour? I am going to try collard green chips and also a massaged salad. Any thoughts? SHe said you could eat the stem too so I tried it raw, it's very good once you peel away the fibrous strips.

Raw kale tastes quite unlike collard greens, much more like raw broccoli florets.
