i made this for our canadian thanksgiving and everyone always loves it smiling smiley

CREAMY carrot raisin salad

1/3 cup raisins
2 cups carrots, peeled and roughly grated
1/4 cup celery, chopped
1/2 cup eggless vegan mayo *** (recipe below this one)
agave to taste (i use blended dates instead of agave)
2 tablespoons orange juice
1 tablespoon lemon juice
1/4 teaspoon salt (omit if avoiding salt)

Mix it all up with love and good intentions and enjoy !

Eggless Vegan Mayonnaise Recipe
Ingredients:
3 tbsp lemon juice
1/2 cup soy milk
1/4 tsp salt
1/4 tsp paprika
1/4 tsp mustard
6 tbsp vegetable oil
Preparation:
Put all the ingredients except the oil in a blender. Blend on the lowest speed. Gradually - one drop at a time - add the oil until the mixture starts to thicken. Continue blending until thickened and smooth. Transfer to a jar and store in the refrigerator

*** personal note about the mayo - I prefer mayonaise type mayo compared to miracle whip which my hubby likes .. also im not a big fan of paprika so i omit it .. start with the lemon , soy and veg oil , and add the salt and spices to taste or omit what you dont like. If you like a more miracle whip type mayo then drizzle in a teaspoon at a time some vinegar (white or applecider **applecider will turn the color from white tho) to give it that more tangy type flavor

oh.. that's it?
wow.. so simple but looks reaaal deelish

i have a question
i tried to make an apple pie before

i used apples .. both blended and sliced
for the crust i used nuts

the thing is.. the whole thing like FELL APAAAAART!!

i mean.. it might as well have been a mushy cobbler

it tasted pretty good but as far as the presentation goes

i have NOOOO idea how you got that pie to look as good as it did

without having the apples falling apart into a crumbling tower when you cut a slice of it out

how DID you DO it??

Hahahaha!

Okay, okay, well The crust was a mix of blended almonds and diced dates. I blended the almonds in a blender (didn't have a food prossesor) and chopped the dates into a nice mushy paste by hand (again no food prossesor) and then combined the two untill it was all incorporated and pressed the mix into the pie pan.

The apples I thinly sliced and made a sauce of dates/oranges/spices: about 5 dates and one to two oranges (one large or two small), then tossed it all together with dried cranberrys and blueberrys and poured into the formed pie crust. I guess by having the apples thinly sliced it helped it stay together and not fall apart along with the sauce. I also let it set in the fridge for a bit too.

I hope this helps! Oh, and The crust was 2c dates / 2c almonds

Good luck, now I want to make another one smiling smiley

I know this apple pie, it is reeaaally good.

Isn't that apple pie from Any Phyo? A friend of mine made a cake like that, and it was from her book ... or another raw food book. But in that recipe there was a teaspoon salt in the crust, which makes it even more delicious, in my opinion.

The mound? That was a 'mock turkey'. It was alright, I think it needed more nuts and/or carrots... too much onion for my taste! Buy it was still good, the pie was the best!
