Soups Galore

On another thread I listed a few soup recipes. Here are those soup recipes and lots more.


Beet Soup (Borscht)
Blend shredded beet root, carrot and cabbage. Season with dill and lemon juice. Garnish with finely shredded carrot and dill sprig. (Optional: minced onion, sea salt, apple cider vinegar, garlic, pepper, fennel)

Berry (or Cherry) Soup
Mix whole and mashed berries (e.g., strawberry, blueberry, raspberry or blackberry) or cherries with orange juice and a squeeze of lemon. (Optional: Add cinnamon, mashed date, mint sprig)

Butternut Squash Soup
Process butternut squash, tahini or pine nuts, tomato, garlic, mashed date, sea salt.

Carrot Soup
1) Savory - Blend shredded carrots, apple, celery, parsley, cumin, and small pressed garlic clove with carrot juice (or water or fresh tomato juice). Add tahini or nut butter to make it creamy, if desired. Garnish with parsley.
2) Sweet - Blend shredded carrot, orange juice, clove, and lemon juice. Garnish with finely shredded carrot or twisted orange peel. (Optional: minced onion, sea salt, pepper, minced onion).

Chili
Blend tomatoes and red bell pepper with chili, nama shoyu, garlic, lemon, cumin, paprika, and Italian herbs. Chop celery, red bell pepper, tomato, mushrooms, onion, yellow squash, and zucchini. Add corn kernels and shredded carrot. Mix. Add tomato juice.

Corn Bisque
Blend corn kernels with garlic, minced onion, thyme, basil, yellow bell pepper, and fresh tomato juice. Stir in minced celery and corn kernels. Add more fresh tomato juice or almond milk to get the consistency you like. Garnish with parsley and pepper.

Cucumber Soup
Blend cucumber, celery juice, minced onion, chopped dill, white pepper, and sea salt with coconut milk. Add additional minced cucumber. Garnish with dill sprig.

Fruit Soup
Blend chopped apple, apple juice, cinnamon and orange zest. Stir in chopped apricots, minced prunes, chopped apple and chopped raisins. (Garnish with chopped almonds.

Gazpacho
Blend tomatoes and tomato juice, onion, lime juice, avocado, pressed garlic, sea salt, pepper, jalapeno, cumin, and cilantro leaves. Stir in minced celery, chopped cucumber, and chopped bell pepper. Garnish with parsley. (Instead of lime juice, apple cider vinegar could be added.)
For a yellow gazpacho, combine orange slices, chopped yellow tomatoes, chopped cucumber, minced onion, pressed garlic, vinegar, and jalapeno.
For a white gazpacho, combine ground almonds, pressed garlic, green grapes, apple cider vinegar, salt, cayenne, and chopped cucumber with blended cucumber.
For a green gazpacho, blend lime juice, vinegar, cilantro, cumin with zucchini, tomatillos, green bell pepper, cucumber, minced onion, tomatoes, water, jalapeno, and salt. Garnish with cilantro.

Melon Soup
1) Spiced - Blend cantaloupe or honeydew melon, celery, green onion, orange bell pepper, orange juice, lime juice, parsley, ginger, cinnamon, and allspice.
2) Sweet - Blend cantaloupe or honeydew melon with orange juice, lemon or lime, and grated ginger. Garnish with mint sprig. (Thin with coconut water.)

Mushroom Soup
Blend mushrooms, minced onion, cinced celery, sea salt, water and tahini or almond butter. Garnish with parsley.

Peach or Nectarine Soup
Blend peach, green grape juice, lemon or lime juice, and cinnamon. Garnish with mint. (Optional: pinch of salt)

Pea Soup
Blend peas, minced onion, and carrot juice or water. Stir in whole peas and finely minced celery. (Optional: sea salt, pressed garlic) (Note: Peas are wonderfully sweet when they are just picked.)

Pepper Pot
Blend red bell pepper, minced onion, chopped tomato, diced sun-dried tomato, and minced celery. Stir in some minced red bell pepper. Season with basil, rosemary and crushed fennel seeds. (Optional: apple cider vinegar, sea salt, pepper)

Plum Soup
Blend honeydew melon, tarragon, lime juice and tarragon. Add chopped plums.

Spinach Soup
Blend spinach, water, spring onion, zucchini, tomato, corn, garlic, oregano, basil, sea salt and pepper. (I don't think Bragg’s is 100% raw, but I add a dash in place of salt. And avocado can be used to make it creamy too.)

Tomato Soup
Blend tomatoes, minced onion, oregano, and celery juice. Mix in chopped tomato, thinly-sliced basil leaves, and minced sun-dried tomatoes. (Optional: pressed garlic, pepper, sea salt)

Very Orange (Bell Pepper and Carrot) Soup
Blend orange bell pepper, shredded carrots, minced onion, orange juice, and celery. Stir in minced orange bell pepper, cumin, parsley, salt and white pepper.

Watermelon Soup
Blend chopped mint, mashed date, lemon juice, grated ginger. Add seeded, chopped watermelon.

Zucchini (or Yellow Squash) Soup
Spiralize zuchini. Combine with grated carrots, thinly sliced celery, minced onion, white pepper, parsley, dill, and sea salt. Make base of almond milk or carrot juice. (Optional: Add blended avocado to thicken and make creamy.)
