Veghunter: Do you make up most of these recipes? I am gonna do the avocado one tomorrow, God willing I can get some decent avocados! I have never seen a smoothie recipe like that and it is very intriguing! Also, what are green mangos? Never encountered them here but perhaps they are just unripe regular ones?

Bananawho, the recipes are largely made up, but some are twists on classic, non-raw recipes, and some are loosely based on recipes I looked up. If I take anything verbatim, I like to give the source.

Green mangoes are indeed unripe mangos. You can get them in varying degrees of unripeness. Just before they turn they have all the mango flavor, but are still a bit tart. The really green young ones don't have much flavor, and can be more sour than tart and are often eaten with salt as a savory item. I'm not sure they can be found in regular supermarkets. I have a great Korean store a few blocks from me and they sell them by the case there. They're eaten green in many parts of Asia and South and Central America, so a place that caters to these ethnicities might be the best bet for finding them. Or you can try regular mangoes and simply add more lime.

Punkrotten, I'm glad you liked what you tried. Tastes vary greatly so it's always fun to hear what someone liked or didn't like.

Haha, Curator. yes it did. I find that my tastes are still changing with eating raw. One of the differences is that I still like very strong flavors, but find they can be overpowering when not eaten in conjunction with some calming cooked food like rice or sour cream.

This dish was a good way to use both the last of this seasons cucumbers and some of the Wakame that I got that's too strong for me.

"Salmon" Mousse


- 1 cup cashews, soaked overnight
- 1/2 orange or red pepper
- 1 sheet Nori
- 1 stick Wakame
- 1 1/2 lemons
- 1/2cup water
- 1 1/2 tsp white Miso
- 5 sprigs dill

Drain soaked cashews and place blender. Coarsely chop pepper and dill fronds and add to blender. Break seaweeds into smaller pieces and sprinkle over nuts. Squeeze the juice of 1.5 lemons over other ingredients. Add miso and and half of water. Turn blender on low and very slowly bring the speed up, stopping and stirring if the blender stops mixing. Add more water gradually if needed to help with blending, but not too much or the 'mousse' won't set. Blend on high until very smooth and creamy.

Serve on cucumbers, raw crackers, or endive leaves. Garnish with dill, lemon, seaweed, or red pepper.

Serves: 4 or more

Easy and surprisingly tasty.

Cauliflower and Cilantro Salad

- 1/4 cauliflower
- 1 large heirloom tomato
- 1/2 bunch cilantro
- 1 lime
- pinch of salt (optional)

Chop cauliflower into evenly sized chunks. Pulse in food processor with a metal blade until approximately rice sized pieces. Pour into a medium bowl. Place washed cilantro into food processor and pulse until finely chopped. Add to cauliflower. Dice tomato and add to cauliflower and cilantro. Squeeze the juice of one lime over the mixture. Add a a pinch of salt if desired. Stir.

Serves: 1

Wow, wow, wow! I noticed that your "salmon" looked like you made it with a professional icing thingie. Are you trained as a raw chef? Wowsie! I like that cauliflower, too. Almost too pretty to eat!

Lol, thanks, bananawho, I'm not trained in anything. I just like working with food. I used a cookie press to make the mousse stars just to show the texture for the picture. You can use a pipette bag and tip or fill a plastic bag and cut off the tip to do some pipette work. There's nothing wrong with putting a dollop on with a knife or a spoon though either. You could also just dip your cucumbers into a bowl of mousse if you prefer.

Oh, I meant to ask you about the stick of wasabi. I have never heard of it like that. I bought some wasabi powder from a natural foods company and it just didn't have much zing. Then I looked at the ingredients and it was mixed with mustard powder and spirulina. I heard that it's very hard to find pure wasabi. Do you buy it in an Asian market or something?

i think i'll try it

i am just missing one ingredient for the confetti salad which is a mango and not too difficult to procure so i will get that. i got all the other ingredients

thanks for the tip on the avocado smoothie
lemon is always so refreshing
i like that with the dates idea
i think i will try that next

i made the parsley salad
but u used italian flatleaf parsley
i used the curly one

i cut it up reaallllll fine
i also got raw olives and they were good
and also added sundried tomatoes
but kept the rest the same

with the yummy corn

cuz they are so tantalizing

i think i'm addicted to this food thread grinning smiley
love everything on it so far

though i haven't tried the mango soup

no pictures of it to show how pretty it looks, but I made a sorbet tonight in my omega that was amazing, frozen super ripe mango cut into chunks, and I took the water from 1 coconut, and the juice from 2 limes, mixed it together and froze it in ice cube trays, then put the mango and the coconut/lime water through the juicer to make delicious coconut mango lime sorbet!...and the entire time I couldn't stop thinking "put the lime in the coconut..."

Banana Spinach Smoothie

- 2 med. bananas
- 1 cup of baby spinach
- 1.5 cups of water

Add peeled bananas, washed spinach, and water to blender and mix until smooth.

Pineapple Lettuce Wraps

- 4 outer romaine lettuce leaves
- 1/2 a med. pineapple
- 1 carrot
- 1/3 large red pepper
- small handful of cilantro

Peel carrot and pineapple and julienne (cut into thin strips). Julienne red pepper. Align 3 or 4 strips each of pineapple, pepper, carrot, and cilantro along one edge of the lettuce leave. Roll into cigars and cut in half.

Serves: 1

I like this thread too, the food is simple, which is what Im searching for, I keep looking in my new raw recipe books and most have tons of ingredients, most of which I dont have or maybe cant even get/find. I really wish I wouldnt have to bother eating at all, take a pill or something, I dont like having to be bothered but my stomach beckons me to give it some attention! SO, my search for simple raw meals is continual. I got a new book on the way called "eating raw for one or 2 people" or something like that, maybe it will have some good simple stuff in it. Im trying to be creative and imaginative and just think stuff up on my own but beyond a regular salad that I love, that's about it so far. Smoothies Im getting better at, but after the one that tore up my stomach Saturday and laying on the couch all day yesterday paying for it, Im going back to simple smoothies too. You know what they say these days..... KISS......... Keep it simple stupid!!! I like to change it to Keep it simple Sassy tho' .....
