i use the totally covered " blank" screen on my greenstar
and it makes the nut butters ( though it takes a little while cuz it is shooting out of a small hole) i don't need to add water to it or oil and its a little "dry"

i CAN add water or oil if i choose to though so it can be creamier

if i use the one with the opening
it pulverizes them and makes them into a meal ( rather quickly, might i add)

if it makes them into a meal
i just water then a little oil ( choose whichever oil u want) and

voila

so simple

I have found that you need to just process the pulp several times to get butter. It takes about 5-7 times until it gets to be a really nice texture, with very little or no oil required. I had the same problem, I hope this helps ;}
