Me too, GilmoreGirl. I love fruit puddings!

I make some chia seed gel as a base and then add pureed fruit (and maybe some chopped), a squeeze of lemon and I have a meal.

Yesterday it was pear-banana-cinnamon-chia pudding.

I often make a lemon-date-chia pudd... (Insert sound of Homer Simpson drooling here.)

Thanks for posting so many ideas. You have given me the inspiration to try others. I hadn't thought of adding spinach leaves to pudding, but I'll give it a go.

Cheers,
Trive

P. S.: For others who haven't yet tried chia gel... when you soak the chia seeds in water, give them a stir after just a minute of soaking and then let them continue soaking on their own. This keeps the seeds from clumping together. No one likes lumpy pudding!

Chia Seed Gel is especially good to add to a liquid meal when you need to stay hydrated. It can greatly help. Just remember the longer you soak it, the more nutrients are accessed. 10 minutes is the minimum; several hrs is even better.
