Any raw Macaroni Salad recipes?

I am looking for a good raw macaroni salad recipe. I keep finding ones using Vegenaise, nutritional yeast, dijon mustard & other ingredients that I would rather not use.

Anyone have a good all raw recipe to share?

this is a vegan mayo i make and is quite good ..not sure how you would make the macaroni smiling smiley

Eggless Vegan Mayonnaise Recipe
Ingredients:
3 tbsp lemon juice
1/2 cup soy milk (personally i like hemp milk here)
1/4 tsp salt
1/4 tsp paprika
1/4 tsp mustard
6 tbsp vegetable oil (personaly i like hemp oil)
Preparation:
Put all the ingredients except the oil in a blender. Blend on the lowest speed. Gradually - one drop at a time - add the oil until the mixture starts to thicken. Continue blending until thickened and smooth. Transfer to a jar and store in the refrigerator


*** personal note about the mayo - I prefer mayonaise type mayo compared to miracle whip which my hubby likes .. also im not a big fan of paprika so i omit it .. start with the lemon , soy and veg oil , and add the salt and spices to taste or omit what you dont like. If you like a more miracle whip type mayo then drizzle in a teaspoon at a time some vinegar (white or applecider **applecider will turn the color from white tho) to give it that more tangy type flavor

Mmmm...looks yummy! I believe we will make that - Will forgo the soy milk though. I wonder if coconut milk would be a good substitute?

So you basically want raw DRESSINGS to put on top of cooked pasta, right? I was horrified to even imagine eating raw pasta...

Well...my wife wanted mac. & potato salad..so instead of making them the conventional way/cooking & such, we started looking for raw recipes. Actually came across a popular one for potato salad in which the jicama is used.

We are also looking into making raw dressings for salads, something to spice it up a bit for my wife & sons' fussy tastes1 grinning smiley

For me, I'm not really that picky - I can eat just about anything raw...

im sure coconut milk would work , it might make it taste , well coconutty tho lol

i think thats why the soy milk is used , its kinda neutral tasting , i dont like soy milk , so i use hemp milk as its kinda neutral tasting too

on the other hand , coconutty flavor might make it really interesting ;D

You have to understand, I am on a "coconut kick" right now, lol. Have experimenting with different types of coco smoothies, making nut butter balls rolled in grated coconut, and other tasty things! grinning smiley

Wow, my mouth is watering now! I can't get macadamia nuts locally, so I will have to order online. I can't wait to try that recipe!

I have rarely eaten macadamia nuts. The really raw ones must be steep, I would imagine. But I think they are probably the fattiest nuts, which is why they would be perfect for this sort of thing. I wonder if pine nuts would be a fair substitute...
