Fennel, baby!

This year was the first I'd ever even had fennel, and I am pretty good about eating produce. It's a kind of weird veggie, isn't it? It tastes like licorice, is kind of sweet...I juiced it a while ago with carrot and apple and my verdict? Meh. Kinda strange taste. I just bought another bulb the other day (.50 a bulb--although conventional-but still!) and I cut a slice and was intrigued about just eating it like that. It was wild that it was sweet and yet is part of the celery family, right? In any case, I was wondering what else I could do with this oddball thingie.

I like to dip fennel in hummus. It's particularly good in combo with apple slices.

Oprah has a salad on her site that sounds good. The mustard vinaigrette and fennel pairing sounds really good since they are both such strong flavors.

I put it in smoothies, just like I do everything else. I like the licorice flavor. I have also juiced it with apple.

I don't have a highspeed blender so I hestitate to try it with my regular blender. I think I will try a different juice combo. Maybe leave out the carrot and just have apple.
