hi everyone,

I tried a lot of recipes for crackers, Unfortunetely they end up very bitter -whatever the recipe...

would someone have the best recipe ever? I really crave something crispy.

It would help if you said what you are making your crackers with so we don't give you recipes with the same ingredients.

first I tried with fresh corn - very bitter, then with flax seed (many different recipes) but the result was disapointing (still bitter).

There are some really interesting looking recipes using the left over pulp from juicing and soaked chia seeds as a binder. They will just taste like veggies and whatever herbs you add.
Also, sprouted buckwheat is a mild flavour and gets very light and crunchy when dehydrated, give that a try and see if you like it a bit better. You can just dehydrate the whole grain and eat them like a little snack if you like. Very satisfying crunch.
Kale chips are supposedly amazing too and very crispy just like chips.

Effectively, the only not so worst recipe I have tried was with sprouted buckwheat - a rather strange taste though but the crackers were crunchy.

A small amount of sweetener like agave nectar could also helpsmiling smiley I love cheezy kale chips (no actual cheese in them,lol)

I am not a fan of agave, not the taste and not the apparent unhealthiness of it either. When I need to sweeten I use dates or date soak water, it works great and is a whole food.

Still waiting for my dehydrator. My mom thought I wouldn't want it until summer for some reason, I said "bring it over already!" Kale chips, crackers and all things crunchy for my little snack monsters grinning smiley

What do you do w that mixture? Just soak it or soak and blend or grind and add water to make a dough or what? I like sunflower seeds even though (according to Gabriel Cousins lectins theory) I'm not supposed to really eat them. Oh well, they grow locally, they are easy to get and cheap to boot.

i tried the cheezy kale (i didn't have any kale so I used some cabbage leaves)

well
I didn't make it to the deshydrator though
I ate evrything before - the whole thing looked soooo good (ha, ha!!)

I 'm sprouting some buckwheat to try the buckwheat bread (a recipe I found here somewhere)

the grains are still into the beginning of the sprouting process after three full days - it's kind of slow
hope it will be good

Best cracker recipe ever, in my opinion:

Raw flax cracker recipe
Inspired by the Boutenkos!

1 cup walnuts (soaked for one hour or so and then rinse ‘em)
1 cup sunflower seeds (soaked for one hour or so and then rinse ‘em)
1 cup almonds (soaked for one hour or so and then rinse ‘em)
1 tomato
1 cup red onion (chopped)
3 tablespoons flaxseed
2 teaspoons sea salt (very important! do not omit)

maybe your batch of corn was bad, i'd try try again!

use hard dent corn not sweet corn and your corn chips wont be sweet .. sweet corn makes sweet chips smiling smiley

I just made these and they are the best flax crackers I've ever had. The recipe is from Rainbow Green Live-Food Cuisine.

Sun-Dred Tomato Flax Crackers
6 cup flax seeds, soaked
2 cup sun-dried tomatoes, soaked
1 cup celery juice
1 cup fresh parsley, minched
3 Tbs Celtic salt
1 Tbs Italian seasoning
3 cloves garlic, minced

Process sun-dried tomatoes in a blender, adding soak water until the mixture is a thick liquid. In a large bowl, combine flax seeds, sun-dried tomatoes, and remaining ingredients. Spread mixture as thin as possible, approx 1/4" thick, on a dehydrator tray with a Teflex sheet. Keeping hands wet will help in the spreading of the flax seeds. Dehydrate at 145F for 2-3 hours, then turn over, remove Teflex, and continue dehydrating for 6-8 hours at 115F, or until desired moisture is obtained.


I dipped them in walnut/basil/collard pesto and it was amazing.

hmmmm.. *.* where'd i get corn? - though those south of the border chips are the crispiest i've had. (vote for best recipe.. )

thinking about them, i figured i'd try something similar with a bag of peas
(12 oz pictsweet) Wal-Mart saves. (they were actually a gift)

how's these sound? i'm drying them now, the mash is so good, i hope the crackers are as good.

12 oz bag pictsweet peas (they were small peas)
1 tbs pine nuts
drizzle sesame oil
1 tsp dried dill
sprinkle garlic salt + powder

one sheet nori cut up into tiny squares

process all to paste spread out then sprinkle nori bits

score into squares

sprinkle with garlic powder/salt

( i like to use a medium sized right angle protractor)

yay!

frozen corn is not raw - maybe that's why those corn crakers are not bitter?

frozen peas are also blanched

My favorite basic cracker:

Zucchini puree
Chopped walnuts

Thicken that if you need to with whatever sounds good. These are the best. They are substantial, and taste like a very pleasant nothing. You can season them any way you want.
