Taco salad

Salsa:
1 medium tomato
2 ribs celery
1 small red bell pepper
handful of cilantro
small amount of green onions (I use only 3 inches of the green grassy part of one green onion)
a pinch of cumin powder (do this to taste)

Food process the ingredients without the tomato. Then add in the tomato last, and process some more, leaving the salsa to the level of chunkiness you desire

Guacamole:
1 avocado
juice of 1/2 lime

Use a fork to mix the lime juice into the avocado to make a guacamole

Salad:
1 romaine heart, chopped
1 cucumber, peeled and diced

Put the salad in a bowl, cover the salad with the salsa, and then spoon out the guacamole to cover the salsa.

I have all but the cilantro, if they've got it at the local green grocer we'll make this tonight. The kids will not eat any but I will, I Love every single thing in this dish smiling smiley.

Great recipe, Prana! I made it last night. It will definitely be a staple--delicious, easy to make, no exotic ingredients, and no nuts!! Most raw taco recipes use taco 'meat' made from nuts--too much fat and hard to digest (for me at least).

I just tried it this morning, well the salsa and guacamole part, wanted something warming as its surprisingly cold this morning after some nice warm sunny days... and added a lil walnut... it was super delicious prana, thankssmiling smiley

Hi Prana,

Good salad recipe. I made it last night however I added some more ingredients in it such as mango, jicima, carrot and basil to make it more nutritious. The idea works quite well as my entire family loved it. Mainly raw taco recipes are made from nuts which are sometimes hard to digest.

Prana, I think that I read somewhere on this site where you had recommended a particular website for buying spices. I've searched high and low on here and cannot find the thread.

Can you recommend a co or more that makes trustworthy raw organic spices?

Also, anywhere to get safe olives? I've never tried any olives that were not done with lye so no clue how they will taste. If you've ever tasted any that you liked, can you please recommend?
