Date: September 21, 2006 05:03PM I started using the water from young coconuts for the liquid in my almond milk
years ago and it is just the yummiest almond milk I've tasted yet: Ingredients that you will need: 1/2 cup almonds 2 cups water (to soak the almonds) 3 young coconuts 1 Tbls honey (or to taste) dash of vanilla additionally you will need: Cheese Cloth Blender soak half cup almonds in water for at least four hours or until the skins come off easily remove the skins with your fingers put the skinless almonds in the blender with the water from 3 young coconut (about 6 cups) if the coconut water doesn't all fit in the blender, just add enough to blend up the almonds and add the rest after blending Add while still blending 1 Tbls honey or to taste Add a dash of vanilla for taste (optional) Strain through a very fine cloth or cheese cloth and there you have the yummiest almond milk around. Additional things you can do with it are: You can freeze it in ice cub trays and either put it through a juicer and make ice cream (you may want to add more honey and vanilla) or you can put some of the frozen almond milk into the blender and add fresh almond milk to it and make a milk shake!! Let me know what you discover with this recipe. It is my favorite that I have ever made up so I am curious to know what you do with it. Have fun! Sorry, only registered users may post in this forum.
