Spring Rolls

I'm sure this is nothing special for any of you who have been eating raw for a long time, but I just wanted to share my version of spring rolls that I've made recently.

For the wrapper, I found a wheat-free spring roll wrapper (rice paper).
As a base, I used large romaine lettuce leaves, or multiple smaller leaves.
The filler, cut into rods: avocado, cucumber, tomato, green onion. Bean sprouts on top, and a little bit of Himalayan rock salt. Yesterday, I also decided to add raw salmon and tuna. I dipped these in (organic & wheat-free) Tamari.

I found this to be EXTREMELY delicious without the fish, but with the fish... it's... orgasmic.

The worst part about this is preparation. The wrappers have to be soaked in hot water for thirty seconds to soften, and then become quite difficult to handle. All the cutting... constant hand washing from messy avocado... it's a little bit of work. But the end result is well worth it, in my opinion.
