The rubber circles they are using are not the only thing available (I personally wouldn't support a business selling such things!), you can get rubber grommets from the hardware store instead. And I don't use whey at all, just salt. Once you've made a batch you can reserve some of the juice as a started to reduce the salt needed but be careful, the salt also works to prevent the growth of bad bacteria.
