Lacto fermented hot sauce!

If you don't eat hot peppers this recipe is not for you but if you do, num NUM! I'm going to try it with apple cider vinegar instead of white wine vinegar myself.

Though come to think of it, lacto is dairy, right? Oops. Omit that bit please...

Lacto in this case refers to the lactobacillus bacteria, a member of the lactic acid group because it converts lactose and other sugars into lactic acid. So it doesn't just use milk sugar (lactose) but it can use other sugars as well.

I got a nice bottle of cayenne hot sauce, generic brand from Stop N' Shop that didn't have any preservatives except maybe some xantham gum. I am so impressed!
