If you don't eat hot peppers this recipe is not for you but if you do, num NUM! I'm going to try it with apple cider vinegar instead of white wine vinegar myself. ~If it uplifts and inspires you, do it.~ Re: Lacto fermented hot sauce!

Though come to think of it, lacto is dairy, right? Oops. Omit that bit please... ~If it uplifts and inspires you, do it.~ Re: Lacto fermented hot sauce!

Date: November 07, 2011 09:08AM Lacto in this case refers to the lactobacillus bacteria, a member of the lactic acid group because it converts lactose and other sugars into lactic acid. So it doesn't just use milk sugar (lactose) but it can use other sugars as well. Re: Lacto fermented hot sauce!

Date: January 15, 2012 11:07AM I got a nice bottle of cayenne hot sauce, generic brand from Stop N' Shop that didn't have any preservatives except maybe some xantham gum. I am so impressed! Sorry, only registered users may post in this forum.
