GT's Kombucha....HELP

Date: October 27, 2011 01:51AM I am not yet ready to make my own kombucha.
I want to take a bottle of GT's Kombucha and ferment it even longer. I don't want to take the lid off of it, I want to keep it sealed. I want to ferment it long enough so that it is sour and more of the sugar is finally fermented. Can this be done? If I leave it sealed, will the bottle explode? I really do not want to unseal the bottle. I realize a lot of members on this board are against kombucha and I respect that, so only those who are into kombucha kindly respond, please. I also hear that GT is coming out with a new formulation that has been fermented longer, and you have to be 21 or over to buy it. Sounds great, I haven't seen it at the stores just yet. Date: November 25, 2011 12:41AM it should be fine sitting, but you might get more scoby. it does get nice and crisp and light the longer it sits.it's easy to make your own. it comes out just as good if not better. (and cheaper!) i haven't had any bottles explode, and i've had some sitting for quite the while, though there is a point somewhere about oxygen possibly being a factor, so i wouldn't be afraid to open them either.
