Raw Cinnamon Granola

I love eating this granola as a snack or as a heavy breakfast (I personally prefer breakfasts to be light and mostly fruit). I almost always will add fresh berries to it when I eat it. Either chopped up strawberries or blackberries. I think it would be good with blueberries or rasberries too. You can also add dried fruits to the recipe. Ones that are tart may be best.



Servings: about 21
Serving Size: 1/2 cup
Calories/serving: aprox. 226 cal.

Equipment needed: Dehydrator, blender

Ingredients:

For Granola:
2 cups Sprouted Buckwheat
1/2 cup Pumpkin Seeds
1/2 cup Flax Seeds (unsoaked!)
1/2 cup Sunflower Seeds
1 cup Brazil Nuts (chopped)
1 cup Almonds (chopped)
1 cup Raisins
1 oe 2 cups Coconut (shredded or flakes)

For the Binder:
8-10 Dates + Soak Water
3 Tablespoons Raisins + Soak Water
1 pinch Sea Salt
1/4 teaspoon Vanilla
1 teapoon Honey
Cinnamon to taste (I use a lot)

Directions:

1. Soak nuts and seeds overnight (or sprout the seeds). Rinse them well. Chop Brazil Nuts and Almonds if you didn't already (I use a food processor).

2. Measure all of teh granola ingredients into a big bowl while raisins and dates are soaking. Add/substitute whatever dried fruits or nuts you would like.

3. In a blender, blend binder ingredients. You will have to guage with your eye whether or not the binder will be enough for all of the granola. If not make a little more or add some water. I find that it's enough though.

4. Add the binder to the granola. Mix really well.

5. Spread on teflex sheets and dehydrate for a couple hours. (My dehydrator doesn't have settings and I dehydrated it for about 4 hours. The directions I have said to do it for an hour at 145* and then 2-3 hours at 105*) Basically I leave mine in unti it reaches a slightly moist but mostly dry consistency.

It's old and made by Mr. Coffee. A friend leant it to me until I can manage to get a better one. I really want an Excalibur!
