Raw Pesto Stuffed Mushrooms

Date: August 07, 2012 12:07AM I love these. Especially as a quick snack. They're filling and oh so good! I just brought one of them over to my neighbor and she said, "Hey, I could eat like this." lol
Anyway, here is a pic of the mushrooms I made today. I got the recipe out of Alissa Cohen's Living on Live Food. Raw Pesto Stuffed Mushrooms 18-22 button mushrooms, washed and stemmed Pesto Stuffing: 1 cup walnuts ½ cup pine nuts 2 cups basil ½ cup extra virgin olive oil 3 cloves garlic ½ teaspoon sea salt 1. Place mushroom caps top side down on dehydrator tray. Blend the stuffing in the food processor and scoop a small amount into each mushroom. 2. Dehydrate at 105 degrees for 5-6 hours until soft. Serve with a large green salad and enjoy! NOTE: I think I dehydrated mine too long but they still taste absolutely wonderful! Sorry, only registered users may post in this forum.
