"Cheesy" Chipotle Kale Chips

My kids are addicted to these! I can see it's quite a flavour trend, so instead of buying expensive ready made kale chips, I made my own recipe!

Cheesy Chipotle Kale Chips

Take one large or two small bunches of kale (organic!) and rip into bite sized pieces, no stems please. Wash well and spin dry. Place in very large bowl. Cover with dressing and massage gently to coat pieces evenly. Then spread out on dehydrator sheets and dry until crisp.

For dressing, place ingredients in blender and process until smooth and creamy:

one chopped red pepper
one clove fresh garlic
1/2 cup raw cashews
1/2 cup raw sunflower seeds
juice of two lemons
1/2 cup water
1 tsp sea salt
1/4 tsp chipotle powder
1 cup nutritional yeast

Wow, that's a lot of nutritional yeast! *sigh* I wish I had a dehydrator right now...

You could probably cut that amount in half and not lose much flavour. I just make them the way the kids like them.

I didnt have red pepper so I just made with yeast braggs and some olive oil. Today

I have had a dehydrator now for about 1.5 years and kale chips are pretty much the only things I use them for. grinning smiley I am going to try your version with more lemon juice and sunflower seeds as half the nuts. In addition to being cheaper than cashews, it might alter the taste in a good way (plus have different needed nutrients). I don't think I would ever use a whole cup of nutritional yeast, though. It's cheezy enough with half the amount and the cost will be lower. Also, with the chipotle, mine is smoked. Sooo delicious!
