Wilted kale salad with creamy chipolte dressing

Date: November 27, 2006 03:44AM Made it today, got the recipe from Russell James~ the raw chef's blog. It is really tasty, and filling.
for salad: 4 heads kale (this will seem like alot but will wilt down when salt is added) 2T celtic sea salt ( I used less) 2 c tomatoes, sliced 1 c hulled hemp seeds For dressing: 3 avocados 2 chipolte peppers ( I used Habanaros) 1/2 c olive oil 2 T agave 1/4 c lemon juice * remove stems from kale, wash then cut into very small bits. *place in bowl, add salt and start to massage the kale till it wilts ( not very long) * add tomatoes and hemp seeds, and mix by hand * blend the dressing ingrediants in high-speed blender until creamy and mix into kale by hand. yum I say. I just can't hae more than a TINY bit of nuts/seeds/avocado or I feel gross for a couple days. Which is a shame, because I'm been wanting a "creamed green"-type meal, and mashed "potatos" sound so good...I used to make them with steamed cauliflower, but not now that I am raw! You could adapt the kale recipe here - leave out the olive oil and only use one avocado, maybe use spinach instead of kale. I also make a 'mashed potatoes' by blending cauliflower and avocado (with some nutmeg, black pepper, lemon - you can add whatever seasonings you like) - you can play with the ratio of cauliflower to avocado so that the fat content works for you both at a satisfaction level and at a digestibility level. And it's hearty and filling and lower fat than guacamole! love Ela Sorry, only registered users may post in this forum.
