'warming'Grapefruit salad and Thai dressing

Date: January 06, 2007 04:57PM l tried this last night & its really nice and fast to make and it leaves a loveley 'warming' effect after you have eaten it due to the ginger,mint,onion and chilli etc
it can serve for 2 or 3 to be eaten with other raw veg/salad, but l put the left overs in fridge(without herbs) and it tasted fine for my lunch to day. l pink grapefruit segments(catch juice for dressing as u cut it) 1 shallots,sliced(l only had 3 spring onions so used those) put above into a dish,then before serving add dressing and 1/2 tbs peanuts,roughtly crushed fresh corriander leaves taste mint to taste Dressing 1/2 clove garlic,crushed(optional) 1/2 red chilli seeded and chopped(opt) small piece grated root ginger to taste 1/2 fresh lime juice l also added some chopped advocado before serving to keep my cals up as l dont want to lose weight.
