Dear 75%guy-what about lemon juice and let sit for a little while and then eat?or what about braggs to taste with ginger juice?or juice of one lemon,1 tsp.of oregano,braggs to taste and 1/2 c.of tahini dressing(8oz.of tahini,juice of 2 lemons,2 garlic cloves,1/4t. of cayenne and braggs to taste).i know i sound like i have stock in braggs.hee hee.anyway or don't use it.i think lemon juice is used alot. i am looking at my uncookbook called "dining in the raw".maybe this will help.taylor

Here is what I do:
I wash the kale,
I tear the sides of the leaf off the tough center stem
(you can save them for a green drink if you so choose)
I roll up two or three leaveds horizontally (so I am going
up the long way, and I will have a short roll)
I slice the rolls very thinkly cross-wise (so I will have
long thin "strings"winking smiley. Then I usually chop once through
each slice (long, thin doesn't do it for me-- shorter is better)
I put all the pieces in a very large bowl (it is easier, but not 100%
necessary if you have about 2 inches of empty bowl above the kale)
Now is the fun part:

to 1 bunch (approximately 1 lb.) kale

I add about
1/2 onion, finely sliced, then chopped
1 t apple cider vinegar
1 T garlic powder (or three cloves garlic, minced very fine)
1 T chili powder (optional) or 1 T curry powder (optional)
1/2 C kalamata olives (chopped)
1 T olive oil

then, I "massage" everything together, i.e., I get my hands in
there, and I mash and squish everything together over and over and over
for several minutes, until the volume is reduced by 2/3, i.e., you will
have only 1/3 as much in the bowl as what you saw when you started massaging.

what happens is the salt in the olives draws out the moisture from the kale.
the kale wilts, and, at the same time, the kale moisture combines with the
ingredients to make a sauce.

This "salad" is very reminiscent, for me, of old fashioned home cooked kale.

You can do the same thing, BTW, with collards, and you can also mix your
greens. (I have mixed mustard, dandelion, kale, collards, and chard)
