Coconut Lime Tart

Date: April 08, 2007 05:49PM I've noticed that many people on this site eat very simply with 80/10/10, so this one might now be for you. If you like to try new things though this might be for you!
Adapted from the Complete Book of Raw Food: I made a smaller batch than here, but this gives you the idea Crust: 2 cups almond pulp 1.5 cups shredded coconut, ground to fine powder [coffee grinder] 3 tbsp honey 6 tsp flaxseed meal 1/4 go 1/2 tsp sea salt 1/2 cup coconut butter warmed to liquid optional: vanilla I also added ground pecans combitne all crust ingredients with 1/4 cup water in mixing bowl [ add coconut buter last] mix with your hands Divide into small pieces and form into little tarts by lining a tart pan or I used a small measuring cup with cheesecloth and press the dough into it, hollowing out the middle [for filling]. Then remove formed tart crust by lifting cheesecloth and put on mesh dehydrator sheet and dehydrate at 105 degree for 18-24 hours Filling: 1 cup coconut meet [about two coconuts] juice of 3-4 limes 5-7 large dates optionally blend other nuts in like cashews if too tart, add honey to make it greener, substitute 1/2 cup avocado for coconut When crusts are done, fill with filling and chill before serving. pictures from my cheep camera: Really rich and really delish.
