Date: June 17, 2007 04:45AM Hey, Alex
I have an enormous bunch of each right now, rapidly disappearing. I enjoy using the collards as wrappers for wraps: Fill it with avocado or young coconut meat, fresh lime or lemon juice Add mango or papaya slices, a little cumin or slivers of red or yellow pepper, sprouts, etc. or untoasted nori sheets as an inner wrapper or just wrap a leaf around a ripe banana For kale or collard salad: Finely chop kale or collard greens marinate in dressing of 1/8 cup of tahini thinned with a spoons of lemon juice a bit of minced garlic (optional -- I don't eat this anymore but it's perfect in this) freshly ground coriander or cumin (also optional) sesame seeds or you could just chop the greens and massage them with some raw coconut oil. Glad you're having them in smoothies. As far as I've found, these greens are wonderful. My favorite is the dinosaur kale (the darker, less curly-leafed kind) ENjoy Re: collard greens/ kale recipies???
