How long will Raw Hummus last?
Posted by: islandgirl ()

I recently sprouted some chick peas and used one of Alisha Cohen's recipes to make hummus. It made a TON of it. Does anyone know if you can freeze it...or how long it will last in the frig?

Thanks.

raw hummus lasts at most 3 days in a very cold fridge before starting to go sour. It can't be frozen without compromising the texture, enzyme structure and taste, but what you could do to save your batch is to dehydrate it.

Some ideas...

Raw hummus can be made into patties as is for a "hummus burger", or you can turn the hummus into "falafel patties" if you add some parsley and ground cumin to it. Dehydrate the patties/burgers till dry but still somewhat soft.

Or you can spread the raw hummus thinly on your teflex and dry it into crispy crackers which will keep for quite a while.
