Zucchini strips in Basil Pesto

Date: July 19, 2007 03:43AM So I made basil pesto for the first time. I had made Zucchini in Marinara sauce but I found the Zucchini to be too hard. My mistake was in not peeling the Zucc I found out b/c this time I peeled the Zucc. It really makes a difference in softness.
The Basill Pesto Zucchini spaghetti was really good! I'm quite surprised that it was that good since I didn't enjoy the Zucchini Spaghetti at all a couple of weeks ago when I tried it. I'm so glad that I am finally able to prepare & eat raw dishes that are delicious and palatable. Woohoo! Eating fruit by itself is fine however, eating something raw gourmet is a luxury that I have not often since my transition to Raw. This makes raw much more pleasurable and it is certainly makes it an easier transition to 100% raw fidelity when I know that I can have a gourmet meal just like I die with SAD but now it's really doing great things for my body rather than poisoning it.
