Chocolate Pudding to Die for!

Hi everyone:

I just made Chocolate Pudding from the "Raw Food real world" book by Matthew Kenney and Sarma Melingailis. If you love chocolate like I do this is the best pudding I have ever had. I just spent the last half hour licking the container of my blender as I didn't want to waste one drop of this fantastic pudding. It was so easy to make in my blender and it only took 5 minutes. Wow, it sure beats standing at the stove and stirring constantly for 15 to 20 minutes and it doesn't compare to this recipe.

No, it is not the one with avacados. This is so easy and simple to make.\

It is made with:


2 cups coconut meat
1/4 cup coconut water at room temperature
1/2 cup maple syrup
1/3 cup agave nectar
1/2 cup cocoa powder
2 T. vanilla extract
1/4 tsp. sea salt

Put in high speed blender, puree until completely smooth. Transfer to bowls and chill for about an hour or two. If you love chocolate you will love this!
You could also use carob powder instead of cocoa.

Hi Everyone!

I'm new to raw and this forum, but I had to jump in and say that I also own the Raw Food Real World book, and it's awesome! I saw this and since i had the coconuts here, I whipped this up. So good!

I'm also going to make macaroons later.

I don't normally have a sweet tooth at all, but today I am really aching for some chocolate.

I'm not 100% raw yet, somewhere around 75% I would say. Almost completely vegan, only some lean animal protein a couple times a week. I'm finding it hard to give it up completely, but I know the more i eat raw, the better I feel and so I'm progressing.

Hope to get to know you all....
