I don't have a lot of fresh coconuts but if I did I would try pureeing the coconut meats and then letting it stand (maybe in a refrigerator) in a glass jar for a day or so and see if the oil rises to the top. That would be the oil; to make the butter I guess I would just mix in a little more, but not all, of the puree.

hi Blooindia,
Here how I make my coconut butter,

1) grate cocomeat (I remove the thin brown skin)
2) Add water and mix well ( i use a vitamix to puree everything)
3) Drain with a fine cloth and press to extract as much milk as possible
4) let stand in a fresh place for a few hours ( I put it in my fridge overnight)
5) take the crean of and put it in a heavy pot
6) heat till all water has evaporated and only curds and oil are left
7) drain with a sieve and fine cloth

NB : be careful not to burn the oil! The final product is clear and will become snow white. It smells deligful too. Two coconuts yields about a cup of oil.

Enjoy!!!

love
Cynthia

I make a sort of coconut butter with coconut flakes (from brown coconuts, sold at health food stores). Unsweetened, of course.

I just fill the food processor nearly full with the coconut flakes, and using an S blade, put on the lid and turn it on. Nothing needs to be added. Just process for a long time (maybe 10 min or longer).

The final results are like coconut cream but with some fine grittiness to it.
