Cilantro Pesto

Date: April 02, 2008 06:35AM I don't make many raw dishes 'cause I don't like even to uncook much, making smoothies, and cutting fruits is time consuming enough for me. I do still have to make some cooked foods due to my childcare biz.
I did make Cilantro Pesto recently though, and it's been a hit and even I like it. It's supposed to be an excellent pesto for drawing out toxins and helping with detox too. 1 cup fresh cilantro 1/2 cup almonds or other nuts (I used almond butter) 1 garlic clove 2 T lemon juice (maybe a bit more) 4 T olive oil(cold pressed) or raw coconut oil I mix it all in a little bullet type food processor, and add a bit of pure water if it's too thick. Oh, it's sooo good..and you can use it for many things. On flaxseed crackers, celery, in roll ups, smoothies, etc. I suppose you could thin it down and use like a sauce maybe. To Prism's recipe I also add some dulse, use flax or Udo's oil instead of the olive oil and use soaked brazil nuts and sunflower seeds for the 'nut' portion. Yum, yum, yum. I heard that cilantro is good for getting rid of heavy metals like mercury in the body. Re: Cilantro Pesto
