will raw storeboufght sunflower seeds sprout?

People often post about sprouting sunflower seeds etc. Can I just use the raw sunflower, pumpkin seeds I buy from Whole Foods that come in the plastic bags? Rarely do these seeds taste very fresh anyway and with pasteurization methods nowadays I feel they won't sprout. Am I wrong about that? Do I have to order special seeds?

I don't know which kind you get in the plastic bags, but the ones in the Woodstock Farms plastic bags don't sprout too well because there's a lot of broken pieces.

The ones from the bulk bins at the health food stores usually have less broken pieces and sprout very well.
